i am going to be very honest with you, hector take for ROSE’S heavenly CAKES: Banana Refrigerator Cake (page 133), prefers ganache frosting!
i am using light whipped ganache, and i prefer the quick version: microwave the cream till bubbles appear, cool till 115 oF, add chopped chocolate, microwave 15 second intervals, stirring often, stop microwaving when 75% of the chocolate is melted, keep stirring, let the residual heat melt the rest. set over an ice water bath and whip till desired consistency.
