hector’s take on ROSE’S heavenly CAKES: Chocolate Layer Cake with Caramel Ganache (page 104) is done as cupcakes.

i adore the enjoyement of serving chocolate and butter cakes at room temperature.  the texture and flavor or chocolate and butter are best enjoyed close to its melting point, so room temperature it is!

however, i’ve been observing that in Hawaii, most seem to prefer it cold!  here it the cupcake, enjoyed straight from the refrigerator.  i must say, i loved it. 

perhaps when you are hot all day, having a cold treat is better?

hector’s take on ROSE’S heavenly CAKES: Chocolate Layer Cake with Caramel Ganache (page 104), turned into cupcakes, sold out for a buck each at my canoe club annual food concession stand.
i used my favorite chocolate from Original Hawaiian Chocolate Factory, and i sprinkled caramelized cacao nibs on top!

from 5 am, i sold coffee:

at 5 pm, i raced my canoe.

no adjustments on baking powder.  i made a 3x batch, and it yielded more than 100 mini cupcakes, with 25 grams of cake batter on each:

when the cakes are cooled, pour the freshly made ganache on top, yummy smooth!
