note that one of the components of the “crisp meringue” cradle is finely chopped 99% dark chocolate. i use my chocolate chopping board reserved exclusively for chopping chocolate:

it will be perfect for the variety of desserts i plan to bring for my canoe club banquet, to celebrate the end of our regatta 2011 season!
you know better by now, that i weigh everything. filling cupcakes by weigh is the fastest, cleaner, and more level method!
i am using silicone cupcake pans, which fit perfectly on a half sheet pan in my 1.5 cu ft countertop convection oven.

for the Cradle Cake (page 61), i measured the dry ingredients at the same time for the spice cake with peanut buttercream and the sticky toffee pudding! flour, sugar, salt, baking powder, baking soda, if any, plus spices if any. all measured, stirred and kept airtight in the refrigerator (or freezer).
definitely helps to own more than one kitchen scale
