ROSE’S heavenly CAKES: Heavenly Coconut Seduction Cake (page 20) has a quick an easy recipe to make coconut whipped cream. all it is cream and a little bit of coconut cream powder, a great product!

ROSE’S heavenly CAKES: Heavenly Coconut Seduction Cake (page 20) uses cream of coconut. coco lopez cream of coconut is my favorite one and it is widely sold! you won’t find it at the canned good section at your grocery store, look at the liqueur section as it is often used to make pina coladas!
it is imperative to measure cream of coconut at room temperature because cold it will separate into coconut juice and coconut butter.
it is also imperative to put the cream of coconut in a food processor or (better yet) an immersion blender. it turns into smooth magic.

my experience indicates that most all butter cakes using baking powder require minimum to none adjustments on the amount of baking powder. you do need baking strips (my favorite ones are silicone ones), and reduce the amount of baking time.
i obtained the most glorious, cute as a bottom, leveled, pair of 6″ cakes!
