when i had a piece of ROSE’S heavenly CAKES: White Velvet Cake with Milk Chocolate Ganache (page 17) i felt with good reason this is one of the most useful cakes in the book!

indeed it is the most popular cake on Cake Bible, 22 years ago.  where you can do cupcakes, layers cakes, as well  as wedding cakes.

white cake isn’t my favorite, because it lacks flavor.  wrong generalization!  this white cake is extraordinary and tasty!

ROSE’S heavenly CAKES: White Velvet Cake with Milk Chocolate Ganache (page 17) makes a tasty ganache with high cacao % milk chocolate.  i change the making method for the ganache.

1- melt chocolate in the oven set at 110 oF, takes about 4 hours, but it is completely unattended: no need to chop the chocolate, no need to stir, and zero chances of overheating (indeed, u can keep the chocolate at 110 oF for days!)

2- scald the cream, then cool til 110 oF

3- blend the two with an immersion blender
