note: for the whipped topping, i didn’t have creme fraiche on hand. i recurred on using half sourcream and half whipping cream. it worked like a charm. it does take a few minutes longer to whip than whipping just whipping cream.

i used silicone cupcake pans, shaped like garden bugs. these pans are a find from ebay, for i apologize if you can’t find them. the genoise was mixed as indicated on the recipe, except i used maui turbinado sugar instead of superfine white sugar. the flavor was great!
