Lemon 02 Poppy Seed-Sour Cream Cake (page 41) – the stars

a special kind of lemon for ROSE’S heavenly CAKES: Lemon Poppy Seed-Sour Cream Cake (page 41), and a special kind of pan.

enjoy. this cake tastes as good as cake can get. i feel like i need to bake this everyday. the burst of lemon with the crunch of poppy seeds and the undertone of sour cream on a perfect melt-in-the-mouth tender butter cake is what most people will say “now, this is cake!”

i used 75% calamansi and 25% lemon. this is the cake i would make with any type of lemon or sour citrus, the rainbow has more than 7 colors in the lemon family!

tastings impressions:

CdS:  “wow, this is good, love the punch of the sour calamansi.  this is very very good.  but, can we use light sour cream instead and no egg yolks?”

CS: “it is almost like creamy, melts in your mouth”

    Hector, loveed this post, especially the information on Calamansi, which I have never tried. Rose’s grower of sevilles stocks them, I may have to give them a whirl.

      thx Julie, just trying to stay local, buy local. it is a small growing tree / bush, with bright green evergreen leaves, and year round fruit that first appears as dark green, then gradually turns to light green then orange. a fun an beautiful tree, loves to grow on its own root stock. it is often confused as a kumquat tree, as i had done for years till now!
