sifting vs whisking: whisking dry ingredients together assures uniform blending of small but vital dry ingredients, like baking powder, salt, etc. rose wrote a thesis proving that sifting DOES NOT blend dry ingredients uniformly! (the purpose of sifting is to break clumps and to loosen dry ingredients)
