on the making of the tea ganache for ROSE’S heavenly CAKES:  Le Succes (page 281).

1 lb of locally grown and processed dark chocolate, a little less than equal amount of homemade creme fraiche, 2 tbsp maui-lavender molokai-tisane tea, 1/4 tsp of the highest quality lemon oil.

the concord doesn’t fly to Hawaii, but that didn’t stop Papa Bernachon to show up today.
