planning my take on ROSE’S heavenly CAKES: Golden Lemon Almond Cake (page 37). this is reportedly Rose’s favorite non-chocolate cake in the book. after having the honor to bake the wedding cake version for the official book launch date, november 2009, i placed the bundt version on low priority. but when I found out that ORGANIC and fair trade turbinado sugar exists i started planning on this best take!
it is now april 2010, and i am jogging with my dog under the city stars, remembering that november 2009 day when i brought the wedding cake to be photographed at the Mauna Kea National Park which coincidentally was the same day i received my first copy of the book. the moment was so compelling that i wrote this review on amazon.com

Hector, I have the same sugars available here in New England, isn’t that interesting?
I find that with the large crystal turbinado, it is necessary to sift or strain it after grinding to superfine, as many large crystals are left in the mix even when it appears to be uniformly superfine.
That is wonderful. For this cake, you do not superfine the sugar.
