Individual 02 Pineapple Upside-Down Cakes (page 339) – angel tube take

the beautiful single servings cake pan for ROSE’S heavenly CAKES: Individual Pineapple Upside-Down Cakes (page 339) is a classic and now carried by many retail stores.

but, hector’s first take is on an angel food silicone pan.

the general idea is that the width of the angel food pan (distance between sides and center tube) is the same width as the single servings cake pan. so, results should be flat even.

the silicone pan is filled only 2″ full. this usually means a 5″ dangerous fall when upside-downing the cake (when inverting the pan to unmold the cake). be nice and cut a cardboard round with a center hole, sized to fit on the baked cake. place it on the cake prior upside-downing and hold the cake thru the cardboard!

another option is to follow the 11″ take from Rose’s PBS series, but i don’t have an 11″ pan.  on youtube:

    H, I like how you think through every little detail when changing pans or presentation. I never would have thought to make the customized cardboard round for unmolding.

      J, the cardboard worked like clockwork. Another thought is to cool and refrigerate the cake in the pan prior unmolding, so it becomes hard like a stick of butter, but that would mean the caramel getting hard and stick to the pan. This cake is to be unmolded as soon as out of the oven, as how I understand it. Warm pineapple u d cake is fabulous.
