a preferred method to mix cocoa on chocolate cakes is to first stir the cocoa in very hot water, as done on ROSE’S heavenly CAKES: Chocolate Butter Cupcakes (page 296).

this isn’t just a matter of convenience and hydration, but a matter of flavor! hot water bursts the cell walls of the minute dust-size particles of the cocoa, thus releasing all the existing flavor!
