Coffee 03 Chiffonlets with Dulce de Leche Whipped Cream (page 334) – exploding dulce de leche

you have to see it to believe it:  when making dulce de leche, NEVER heat an unopened can of condensed milk.  it exploded on my dear friend from Seattle who i just visited this past summer!  the safest and most delicious method is described on ROSE’S heavenly CAKES: Coffee Chiffonlets with Dulce de Leche Whipped Cream (page 334).

    My cousin neglected 4 cans of Eagle Brand in the Pressure Cooker and let it run dry!! An insurance claim actually had to be filed. No people were hurt but much repair was needed in the kitchen. I’ll stick with Rose and David Lebovitz too.
