ROSE’S heavenly CAKES: Chocolate-Covered Strawberry Cake (page 91) has a similar preparation method as the Woody’s Lemon Luxury Layer Cake. here some additional tips hope you enjoy:
1- while preheating the oven, braise beef! with a heavy cast iron dutch oven, sear the beef stove top first, add marsala wine, cover, place in the oven. i am cooking maui grass fed chuck roast. dinner will be ready before your cake!
2- you can melt the white chocolate called for on the cake recipe, by placing it near your oven exhaust. most electric ovens have a small heat vent on the back panel or under one of the burners. this is such a time saver, it does the job or give a kick start and you can finish melting the chocolate with less time on the double boiler or microwave (or induction stove, as it is my preferred method to melt chocolate).
3- i love this scale. it has the traditional raised base profile. sure, it isn’t paper thin sleek, but it is the most comfortable to use and functional. you can place a full sheet pan on top and still be able to read the numbers. also, things touching the scale nearby, as you see on this crowded picture, do not interfere.
4- the original recipe is baked on a pair of 9-inch round pans. i will attempt a fluted tube pan instead. i started a discussion at Rose’s forum here stay tuned:
I sometimes soften butter this way (the ones from the freezer) – by putting it near the vents. Also good for a “warm environment” for bread to rise, :).
J, absolutely great tip, however i prefer nowadays to soften butter in my wine chiller, that way i don’t have to worry about melting it.
