just early measuring the dry ingredients for ROSE’S heavenly CAKES: Coffee Chiffonlets with Dulce de Leche Whipped Cream (page 334).  flour, sugar, salt and baking soda are mixed, covered airtight, and kept refrigerated till the day i feel baking!

now a coffee treat for you.  one of my tests to determine a good coffee, i making a espresso with it.  when crema is tall like this, it tells me that the coffee is really fresh (recently roasted) or has been properly packaged and preserved.
