J, i’ve not done so, however i am fairly sure you can. almonds are lower in fat content than walmuts or macs, if anything the cake will be a little crisper.
the structure of this cake, as well as most other sponge cakes (where eggs are foamed), doesn’t depend a whole lot on fat content, so i would just go for it!
