Saint-Honore 12 Triffle (page 227) – much detail on simple syrup

it isn’t critical, but it is perfect.  when making the syrup for ROSE’S heavenly CAKES: Saint-Honore Triffle (page 227), do it on an induction stove.

induction heats so efficiently and the sides of the pot do not get too hot, if hot at all.  there is very little evaporation.  said that, it is perfect to cover with a piece of plastic wrap to keep the cooling process completely evaporation free.
