this is a genoise using wondra flour which results on a most tender and golden buttery texture.
my miniature heart cake pans are 6 in a quarter sheet and perfectly 1-inch deep
H, I have 4 individual miniature heart pan from Sur La Table. I haven’t used it. Thought of making genoise but I was afraid that the batter will rise too high and overflow. I’m so glad you posted this because now I will go and try the pans out.
J, i’ve been having GOOD results baking genoise in any size pans. just don’t fill them more than 2/3 rds full.
