ROSE’S heavenly CAKES: Chocolate Tomato Cake with Mystery Ganache (page 87) is my favorite chocolate butter cake. i adore it so much that i will try the extra mile: making my own tomato soup concentrate… vine ripened local tomatoes… inspiration from italy… inspiration from my brown rice lunches… my new oven… you name it.
my take on tomato soup concentrate is using the recipe for Oven-Dried Cherry or Grape Tomatoes (Bread Bible, page 193). i used ‘cocktail’ tomatoes, which are about 2 times the size of cherry tomatoes, so i quartered the tomatoes. after oven drying the tomatoes, strain and discard seeds and skin. to strain the cooked tomatoes, i use my kitchenaid food and vegetable strainer. to obtain as much tomato soup concentrate as possible, return the extruded seeds and skins to the strainer for 2 to 3 times.
i diced 3 lbs of tomatoes, and the yield was 553 gr of tomato soup concentrate. this is more than sufficient for one recipe for this cake.
