on the second day after xmas, hector’s take on ROSE’S heavenly CAKES: Black Chocolate Party Cake (page 119):
this is the nordic ware 3d xmas pan. mix a 1.5 batch and fill the pan near full. with a small offset icing spatula, force cake batter on the tree tops, filling the stars completely.
i like to lower the oven temperature by -25 oF during the first 15 minutes of baking to allow the batter to spread and rise more evenly, filling all the flutes. at 30 minutes of baking, tent the tree tops with heavy duty aluminum foil, so they don’t over brown. now, bring the oven temperature back up +25 oF and bake till the cake has fully risen and the top crust has set. now, lower the oven temperature back down -25 oF and bake untill internal temperature on the center of the cake is 195 oF.
the trees will be full. with a sharp bread or serrated knife, trip the excess cake overfilling the pan.
