for the crumb filling and topping: macs subs walnuts, and maui turbinado sugar subs light brown and white sugar.
for the apple filling, 6 different takes were chosen. on most, patti kimball’s passion fruit jelly subs the lemon juice.
1- steamed purple okinawan sweet potatoes macinated overnight with passion fruit jelly.
2- kiwi macinated overnight with passion fruit jelly.
3- strawberries macinated overnight with cordon rose strawberry conserve.
4- pineapple macinated overnight with passion fruit jelly.
5- candied buda hand (citron) macinated overnight with passion fruit jelly.
6- ken love’s lulo jam.
all i am saying is that this cake is great with just about any fruit you add in!
