    • thx J. i didn’t have time to chill the cake, but i would have. the cake was completely cooled though. the ganache was made 24 hours ahead and kept at room temperature for a very slow and stable setting. then I filled my piping bag and placed the filled bag in my wine cellar 65oF for about 30 minutes.
