a lot is said on freezing sour cream. when thawed it separates! but if you beat it with the beaterblade, it reconstitutes again smooth! it does become liquid but for cheesecake it works just fine.
to make ROSE’S heavenly CAKES: Cranberry Crown Cheesecake (page 241) with frozen sour cream, follow this order when mixing. first, beat the thawed sour cream with sugar and lemon juice until smooth and liquid. then, add the cream cheese and beat till smooth and creamy. add the rest of the ingredients and beat till incorporated. and of course, always using the beater blade!
