Catalan 01 Salt Pinch Cake (page 197) – unusual mixing

hector’s take on ROSE’S heavenly CAKES: Catalan Salt Pinch Cake (page 197) is on individual panettone paper cupcake liners.  9 fits perfectly, a verified by my favorite electronic kitchen scale:

never had i mixed a cake that requires adding 2 tbsp of yolks into an almond meringue, every 2 minutes for 20 minutes!

can someone tell me how this mixing method works?

the baked cake was ethereal willowy like clouds.  yumm!
