as i am 6 cakes shy from the completion of hector’s take on ROSE’S heavenly CAKES (baking all the recipes from the book), i stomped into these old video files just prior setting up the kitchen in my new apartment, back in fall 2008.
hector’s take project started as soon as i got my mixer plugged:
and one of the first things to do was the remake a Baked Hawaii from the cake bible:
and then slice prosciutto for the Prosciutto Ring from the bread bible:
Hector, was that your 5 quart mixer?
S, 6 qt, professional 600.
Not so bad in terms of the noise it makes…the 5 qt must be super quite then…
i TOTALLY hate hate hate!!!!!!! the noise of the professional 600.
it is noisier than a giant 40 or 60 quart that i use at the bakeries i used to work at!

5qt bowl lift or tilt head?

Which is more convenient? Tilt head, right? Hav’nt used a stand mixer so far so am pretty much blank on this…have always used a hand mixer to date.
i like tilt heads, but it really is just a matter of getting used to. bowl lift is the only mixers you have at bakeries, so one gets used to not having a tilt head. won’t make any difference in the batter.
if you get a bowl lift, i prefer the 6 qt because the bowl is wider than the 5 qt bowl lift.
