hector’s new take on ROSE’S heavenly CAKES: Deep Chocolate Passion Wedding Cake (page 409) is done as a chocolate strawberry shortcake with fresh strawberries and whipped cream.
making a 2x batch of the 6″ 9″ batter yields well for a set of 6″ 8″ and 10″ wedding cake, slightly filled fuller.
no adjustments on the leavening. i mixed the 2x batch at once on my gleaming 7 qt Bosch mixer. this German beauty whisked the batter without a hiccup.
each layer will be torted in half and filled with whipped cream and fresh strawberries. the wedding cake is designed as 3 floating tiers. i love using my Wilton hidden pillars.
