hector’s new take on ROSE’S heavenly CAKES: Deep Chocolate Passion Wedding Cake (page 409) is done as a chocolate strawberry shortcake with fresh strawberries and whipped cream.
here the many steps of assembling a wedding cake!
1- torte in half:
2- use a toothpick or a lightweight fork to mark the layers and stack them back on the same place:
3- slice strawberries for the filling:
4- ideally, if you want a 1/4″ thick filling, the strawberries should be 1/4″ thick:
5- each cake tier is 2 baked layers. each layer is torted in half. this gives you a total of 4 layers and 3 fillings, per tier:
6- note the color of my whipped cream. it is a little ivory because i use tons of vanilla. most bakeries will not use vanilla at all because the cake won’t be wedding white.
7- the cake tiers, assembled, crumb coated, and resting.
8- now we add a second coat of pristine white whipped cream, sans vanilla:
9- and voila (i would have added a third coat but didn’t have the time or budget):
Hello! I am going to make a cake and use the Wilton pillars like you have suggested but just wondering how do I place a pillar on a plate without having a wobbaly cake? It has acces-points at the bottomside of the plate, but what about the top of the plate, just stick the pillars into the cake?? Also do you recommend using a middle dowel cos I see you’ve drilled a hole through the plate’s centres.
